Anna Potatoes Recipe with Potatoes, Butter & Parsley.
INGREDIENTS
Potatoes
Butter
Parsley
Salt & Pepper to taste
METHOD
Choose long uniform Potatoes. Peel and cut crosswise into thin slices. Wash and dry carefully in a towel. Butter a round fireproof dish, about 7 inches in diameter. Place the slices, in over lapping circles, in the bottom. Dust with Salt & Pepper to taste, then sprinkle with melted Butter. Cover with a second layer. Repeat layers in the same way until the dish is full. Cover and bake in a moderately hot oven (400F, 200C, Mark 6) for 1/2 hour. Drain off the Butter into a basin for future use. Turn Potato mould on to a hot dish. Serve garnished with Parsley. Some cooks prefer to par-boil the slices for 10 minutes before arranging them in the dish.
