Baked Bananas with Wine Sauce Recipe with Bananas, Wine, Orange Juice, Sugar, Coconut and Rum
INGREDIENTS
4 Bananas, peeled and quartered
1/4 pint (150ml) White Wine
1/4 pint (150ml) Orange Juice
2 oz (50g) Brown Sugar
2 oz (50g) Butter
3 oz (85g) Desiccated Coconut
For the sauce:
3 Egg Yolks
3 oz (85g) Sugar
1/4 pint (150ml) White Wine
1 tablespoon Rum
METHOD
Arrange the Bananas in a shallow casserole. Mix together the Wine, Orange Juice and Brown Sugar and pour over the fruit. Dot with Butter, sprinkle with Coconut and bake at 425F / 220C / Mark 7 until the Bananas are soft and the Coconut a toasty brown.
For the sauce, beat the Egg Yolks and Sugar together and stir in the Wine. Cook in a large basin over a pan of hot water, stirring all the time until the sauce is thick and creamy. remove from the heat and stir in the Rum. Serve hot.
