Baked Marrow Recipe

Baked Marrow Recipe with Marrow, Butter and Parsley

INGREDIENTS

1 medium sized Marrow
2 oz (50g) Butter
Salt & Pepper
Finely chopped Parsley

METHOD

Peel and quarter the marrow and remove the seeds and soft part, then cut the quarters into smaller pieces. Wash and drain them thoroughly, and place into a buttered dish. Season with salt and pepper on each layer. Cover the dish and bake in a moderate (375F, 190C, Mark 5) oven until tender, keeping it well basted. It will take up to an hour to cook. Sprinkle the marrow with finely chopped parsley, and serve from the dish.

Enough for 3 or 4 people.
