Braised Mutton Chops with Celery Recipe with Mutton Chops, Celery, Carrot, Onion, Butter and Stock.
INGREDIENTS
2 lb (900g) Breast of Lamb
1 Medium Carrot
1 Large Onion
1 Clove
1 dessertspoon Mushroom Catsup (Optional)
1 oz (25g) Butter
2 tablespoon Red Currant Jelly
1 dessertspoon Flour
1 pint Lamb Stock
Salt & Pepper
A Little Water
METHOD
Prepare and cut the vegetables into small pieces and fry them in the butter until tender. Then put them into a casserole with a tightly fitting lid. Fry the chops until nicely browned. Then turn them on the vegetables. Pour in the stock. Cover closely and bake in a moderate oven (375F, 190C, Mark 4) for one hour. Put the cutlets on a hot dish with the vegetables round. Skim the gravy and pour it around. Serve very hot.
