Brown Betty Recipe
Brown Betty with Cooking Apples, Breadcrumbs, Demerara Sugar, Butter, Cinnamon and Ginger.
INGREDIENTS
1 lb (450g) Cooking Apples
4 oz (100g) Breadcrumbs
2 oz (50g) Demerara Sugar
1 oz (25g) Butter
Pinch of Ground Cinnamon
Pinch of Ground Ginger
METHOD
Stale bread is best for this. Grate (or blend it) the bread finely. Wash and core the apples, chop or grate them on a coarse grater. Mix the spices with the sugar. Put a layer of crumbs in a well greased pie-dish, then a layer of apple, a sprinkling of sugar and spice. Repeat the layers, finishing with breadcrumbs. Put the remainder of the butter in scraps on the top and bake in a moderate oven (200C, 400F, Mark 6) for 30 minutes.
