Brussel Sprout Omelette Recipe
Brussel Sprout Omelette Recipe with Brussel Sprouts, Eggs, Butter & Lime Juice
INGREDIENTS
25 Young Brussel Sprouts
6 Eggs
1 oz Butter
Salt & Pepper
Squeeze of Lime
METHOD
Boil the Brussel Sprouts until tender. Cut each one into quarters and dry on a cloth.
In a large bowl beat up the Eggs and season to taste with the Salt & Pepper. Add to this the Brussel Sprout Quarters and mix well.
Heat the Butter in the pan and when it starts to bubble pour in the mixture. Sprinkle with Salt & Pepper and cook until a nice brown. Add a Squeeze of Lime and serve immediately.
Enough for 4 or 5 people.
