Butter Bean Soup Recipe
Butter Bean Soup Recipe with Butter Beans, Onion, Butter, Flour and Stock.
INGREDIENTS
2 oz (50g) Dried Butter Beans
1 Medium Sized Onion
2 oz (50g) Butter
1 oz (25g) Plain Flour
2 pints (1.2 litres) Chicken Stock
Salt & Pepper
METHOD
Soak the beans overnight in cold water, then drain and put into a saucepan with the stock and boil very gently until they are tender - about 1 hour. Peel and chop the onion, and fry in the butter until golden brown. Sprinkle in the flour, stirring all the time, while the mixture cooks gently for 2 or 3 minutes. Rub the beans through a sieve (or blend), add them to the flour and onion, and stir while the stock is mixed in gradually. Season if required. Bring to the boil and serve.
