Cod Fish Balls Recipe

Cod Fish Balls Recipe with Salt Cod, Potatoes, Butter, Hot Milk, Eggs, Breadcrumbs and Parsley.

INGREDIENTS

1 lb (450g) Salt Cod
6 Large Potatoes
2 tablespoons Butter
Hot Milk, to moisten
2 Eggs
Breadcrumbs
Parsley
Salt & Pepper to taste

METHOD

Place the Fish in a saucepan. Cover with cold water and bring to the boil. Drain off the water. Cover with water again. Bring to the boil and simmer until tender. Drain off the water again. Flake the Fish with your fingers into a basin. Meanwhile, have Potatoes boiled and drained. Mash. Stir in the Butter and add enough Milk to moisten. Beat until creamy. Season to taste with the Salt & Pepper. Put the Fish and Potatoes together and re-season to taste with Pepper. Beat and stir in sufficient Egg to make it bind. Beat again until very light, and with floured hands roll into small balls. Brush over with Egg and toss in Breadcrumbs. Fry in deep smoking hot fat until crispy and golden. Serve in a hot dish lined with a plain paper doyley, garnished with Parsley.

Enough for 4 or 5 people.
