Cream of Potato Soup Recipe
Cream of Potato Soup Recipe with Potatoes, Water, Milk, Butter, Flour, Onion & Parsley.
INGREDIENTS
1 pint (550ml) Chopped Cooked, Boiled or Steamed Potato
1 pint (550ml) Potato Water
1 1/2 pint (750ml) Hot Milk
1 1/2 oz (40g) Butter
1 1/2 oz (40g) Plain Flour
1 Small Onion, chopped finely
1 teaspoon Chopped Parsley
Salt & Pepper to taste
METHOD
Place the Potatoes in a saucepan. Add the Potato Water, chopped Onion and half of the Parsley. Cover and simmer for 20 minutes to make a Potato broth. Melt the Butter in another saucepan and then remove from the heat. Stir in Plain Flour, and when smooth, stir in the Hot Milk by degrees. Return to the heat and stir until boiling. Add the Potato broth which may be whisked or sieved. Season to taste with Salt & Pepper. Sprinkle with the remaining Parsley and serve.
Enough for 4 to 6 people.
