Curried Cauliflower Recipe
Curried Cauliflower Recipe with Cauliflower, Onion, Coconut, Curry Powder, Ground Ginger, Apple, Lemon and Rice.
INGREDIENTS
1 Cauliflower
1 Large Onion
2 oz (25g) Butter
Desiccated Coconut
1/2 teaspoon Curry Powder
Salt & Pepper
Pinch of Ground Ginger
1 Cooking Apple
1 teaspoon Lemon Juice
1 pint (600ml) Vegetable Stock
1/2 oz (13g) Ground Rice
METHOD
Peel and chop the onion, peel, core and chop the apple and fry both until well browned in the butter. Then add a tablespoon of the desiccated coconut, a seasoning of salt & pepper, the ginger, the curry powder and lemon juice. Mix the stock with the rice and stir it in. Then simmer for half an hour. Boil the cauliflower in the usual way. Divide it into pieces of convenient size for serving. Put them in a dish, pour the curry over, decorated with finely grated coconut and serve hot.
Enough for 4 people.
