Date Batter Pudding Recipe
Date Batter Pudding with Dates, Batter, Sugar, Butter, Lemon and Icing Sugar.
INGREDIENTS
1/2 pint Batter
1/2 pint (150ml) Stoned Dates
1 oz (25g) Sugar
1 oz (25g) Butter
Grated Rind from 1/2 Lemon
Icing Sugar
METHOD
Butter a pie dish. Make a batter as for batter pudding, flavouring it with the grated lemon rind. Pour it into a pie dish and add the dates. Put the remains of the butter in small pieces on the top and bake until set in a rather hot oven (230C, 450F, Mark 8). Sift icing sugar over and serve hot.
