Devonshire Scallops Recipe
Devonshire Scallops Recipe with Potatoes, Mustard, Cheese, Parsley, Cayenne, Milk & Butter.
INGREDIENTS
1 lb (450g) Cooked Potatoes
1/4 teaspoonful Mustard
4 oz (100g) Grated Cheese
1 teaspoonful Chopped Parsley
Sprinkling of Cayenne Pepper
1/4 pint (150ml) Milk
1 oz (25g) Butter
Empty Scallop Shells
METHOD
Rub the Potatoes through a sieve. Melt the Butter, add the sieved Potatoes, Parsley, Grated Cheese (leaving a little to sprinkle over the top), Mustard and Cayenne. Beat thoroughly. Put this mixture into sufficient buttered Scallop Shells. Sprinkle with Grated Cheese and brown in a hot oven or under a grill.
