Eggs Domino Recipe

Eggs Domino Recipe with Butter, Potatoes, Onion, Bacon, Milk and Eggs

INGREDIENTS

1 oz (28g) Butter
2 lb (900g) Potatoes, peeled and cubed
Salt & Pepper
1 large Onion, peeled and thinly sliced
4 rashers Bacon, de-rinded and chopped
1/4 pint (150ml) Milk
8 Eggs

METHOD

Butter a large ovenproof dish. Place a layer of Potato cubes in the bottom and season well. Cover with half the Onion and Bacon. Repeat Potato, Onion and Bacon layers, seasoning between each, and cover with a final layer of Potatoes.

Pour over the Milk and dot with pieces of Butter. Cover the dish with a lid or foil and bake at 400F / 200C / Mark 6 for 1 hour, removing cover after 45 minutes. At the end of the hour, remove from the oven and push 8 hallows in the surface with the back of a large spoon. Break and Egg into each hollow. Return the dish to the oven and bake for a further 6 to 8 minutes until the eggs are just set.
