Faggots Recipe
Faggots Recipe with Liver, Bacon, Onions, Herbs, Sage and Bread.
INGREDIENTS
1 lb (450g) Pig's Liver
8 oz (225g) Bacon
1 lb (450g) Onions, peeled and sliced
Small Bunch of Fresh Herbs
6 Sage Leaves
1 lb (450g) Stale Bread
Salt & Pepper
METHOD
Remove any hard crusts from the bread and cut it into small pieces. Cover with warm water, and when quite soft drain off the water, press the bread as dry as possible and beat it smooth with a fork. Wash and dry the liver. Remove any rind from the bacon, then cut the liver and bacon into small pieces, and mix them with the onions. Put these through a mincer (or blend).
To the bread add the herbs finely chopped and a good seasoning of salt & pepper. Now add the minced meats, and when thoroughly mixed, form the mixture into balls. Pack them closely together in a baking tin. Bake in a hot oven (450F, 230C, Mark 8) for about 45 minutes. They should be nicely browned when done. Serve hot or cold.
