Fish Cakes Recipe

Fish Cakes Recipe with Mashed Potatoes, Egg, Cooked Fish, Butter, Parsley, Flour & Lemon.

INGREDIENTS

1 1/2 lb (675g) Hot Mashed Potatoes
1 Beaten Egg
12 oz (350g) Cooked Fish
1 tablespoon Melted Butter
1 teaspoon Parsley, finely chopped
Plain Flour
Lemon
Salt & Pepper to taste

METHOD

Flake Fish into a basin. Stir in hot Potato, Parsley, Butter and Salt & Pepper to taste. Stir in enough Egg to make the mixture moist. Beat thoroughly. Divide into 12 equal-sized portions. With floured hands, roll into balls, then pat gently to flatten. Dip in Flour and fry the cakes in both sides in a little smoking hot bacon fat until brown. Serve on a hot dish on a doyley, garnished with sprigs of Parsley and Lemon.

Enough for 6 people.
