Forfar Bridies Recipe

Forfar Bridies Recipe with Steak, Beef Suet, Onion, Flour & Water.

INGREDIENTS

1 lb (450g) Best Steak
3 oz (75g) Beef Suet
1 Onion, minced
Flour
Water
Salt & Pepper to taste

METHOD

Beat the Steak with a rolling pin, then cut it into narrow strips. Cut the strips into inch lengths, and season with Salt & Pepper, then divide them into three pieces. Add the minced Suet, Salt to taste, and minced Onion.

Make a stiff pastry with Flour, Water and a pinch of Salt, and roll it out. Cut it into oval shapes and cover the half of each oval with the Meat. Sprinkle with Suet, and brush the edges with cold water. Fold over and crimp the edges with finger and thumb, then cut a small hole in the centre of each. Bake for about 30 minutes in a quick oven (375F / 190C / Mark 5).
