Fried Marrow Recipe with Marrow, Egg, Breadcrumbs and Butter
INGREDIENTS
1 Marrow
Egg
Breadcrumbs
Butter
METHOD
Peel the marrow and cut it crosswise into slices about 1/2 inch thick (15mm). Remove the seeds from the centre, leaving thick rings of marrow. Beat the egg, brush the marrow over with it and then coat them with breadcrumbs.
Heat some oil in a frying pan and when hot, fry the marrow rings, a few at a time, until tender, turning them over when brown. Drain them, and serve.
