Green Sweet Pepper Soup Recipe
Green Sweet Pepper Soup with Green Pepper, Tomatoes, Onion, Butter and Chicken Stock.
INGREDIENTS
1/2 Very Small Onion, finely chopped
1/2 Small Green Pepper, finely chopped
2 oz (50g) Butter
1 1/2 oz (35g) Flour
1 lb (450g) Tomatoes, quartered
2 pints (1.2 litres) Chicken Stock
Salt & Pepper
Cayenne Pepper
METHOD
Fry the onion and green pepper in the butter for 5 minutes without browning them. Mix in the flour then the tomatoes and the stock and simmer for around 30 minutes.
Now rub the whole thing through a sieve (or blend) and season well with salt, pepper and cayenne pepper. If you like you can at the very last minute add a small dash of vinegar and a little horseradish sauce.
Serves 4.
