Irish Hot Pot Recipe
Irish Hot Pot Recipe with Potatoes, Mutton, Stock & Onions.
INGREDIENTS
2 lb (900g) Peeled Potatoes
1 lb (450g) Middle Neck of Mutton
1/2 pint (300ml) Mutton Stock
2 Peeled Medium Onions
Salt & Pepper to taste
METHOD
Slice the Potatoes and cut the Mutton into suitable pieces; slice the Onions. Place pieces of the Mutton into the bottom of a greased pie dish. Cover with the Onions, then with the Potatoes. Season with Salt & Pepper. Repeat layers, finishing with Potatoes. Add the Stock. Cover with greased paper. Cook in a moderate oven (350F) until ready, then remove the paper and brown the Potatoes.
