Irish Stew Recipe
Irish Stew Recipe with Potatoes, Mutton, Water & Onions.
INGREDIENTS
1 lb (450g) Peeled Potatoes
1/2 lb (225g) Breast of Mutton
1/2 pint (300ml) Water
2 Medium Peeled Onions
Salt & Pepper to taste
METHOD
Cut the Meat into neat pieces. Peel and slice the Onions. Wash, peel and slice the Potatoes. Place a thin layer of Potato in the bottom of a saucepan. Coevr with a layer of Mutton. Sprinkle with Salt & Pepper. Repeat layers until ingredients are all used up, leaving plenty of Potatoes for the top. Add water. Cover. Stew slowly for 1 1/2 hours, then draw pan from the heat. Stand for 5 minutes and uncover. Serve on a hot dish.
Enough for 2 or 3 people.
NOTE: You can make Irish Stew with any kind of Mutton or Lamb and you can make it with Beef as well, if you don't call it "Irish." Allow roughly twice the weight of Onions in meat, and twice the weight of meat in potatoes.
