Jardiniere Soup Recipe
Jardiniere Soup Recipe with Carrots, Turnips, Silver Onions, Lettuce, Tarragon, Sugar and Stock.
INGREDIENTS
2 Young Carrots
2 Young Turnips
12 Tiny Silver Onions
Heart of a Lettuce
Sprig of Tarragon
1 teaspoon Sugar
1 1/2 pints (900ml) Vegetable Stock
METHOD
Peel the carrots, onion and turnips and cut into cubes or fancy shapes, leaving the onions whole. Shred the lettuce and chop the tarragon.
Put all into a saucepan with the sugar and stock, and simmer slowly until the vegetables are tender.
Enough for 4 people.
