Leicester Potato Soup Recipe
Leicester Potato Soup Recipe with Potatoes, Onion, Butter, Flour, Turnips, Stock, Milk & Cayenne Pepper.
INGREDIENTS
6 Medium Potatoes
1 tablespoon finely chopped Onion
1 oz (25g) Butter
1 oz (25g) Plain Flour
2 Small Turnips
1 pint (550ml) Boiling Water or Stock
1/2 pint (250ml) Hot Milk
Salt, Pepper & Cayenne Pepper
METHOD
Wash, peel and chop the Potatoes. Wash, peel and slice the Turnips. Place in a saucepan with the Onions and cover with cold water. Bring to boil and boil for 10 minutes, then Drain. Add the Boiling Water or Stock. Cover and simmer until the vegetables are soft. Drain the water into basin and reserve. Rub the vegetables through a sieve. Add vegetable water and Milk. Reheat. Melt the Butter in another saucepan. Add the Flour and stir. When frothy, stir in puree gradually. Bring to the boil. Boil for a minute or two. Season to taste.
