Maids of Honour Recipe
Maids of Honour Recipe with Cottage Cheese, Butter, Eggs, Sugar, Ground Almonds, Lemon, Nutmeg, Mashed Potato and Puff Pastry.
INGREDIENTS
4 oz (100g) Cottage Cheese
3 oz (75g) Butter
2 Egg Yolks
3 oz (75g) Castor Sugar
1 1/2 oz (40g) Ground Almonds
Grated Rind & Juice from One Lemon
1/2 teaspoon Almond Essence
1/4 teaspoon Grated Nutmeg
1 heaped tablespoon Cold Mashed Potato
8 oz (225g) Puff Pastry
METHOD
Sieve the cottage cheese with the butter. Beat up the yolks, add the sugar and beat well. Add now the mashed potato, ground almonds, grated rind and juice of the lemon, the essence and nutmeg. Mix these all well together and then add them gradually to the cottage cheese and butter mixture.
Line about three dozen patty tins with puff pastry and fill each three quarters full with the mixture. Bake for twenty five to thirty minutes until the filling is set and a beautiful golden brown.
Enough for 4 people.
