Marrow with Red Wine Recipe
Marrow with Red Wine Recipe with Marrow, Butter, Onion, Red Wine, Lemon Juice and Parsley
INGREDIENTS
1 small Marrow, peeled
4 tablespoons Olive Oil
1/2 oz (14g) Butter
1 small Onion, peeled and finely chopped
1/4 pint (150ml) Red Wine
Salt & Pepper
A little Lemon Juice
Chopped Parsley to garnish
METHOD
Cut the Marrow into 1/2 in (1 cm) slices, removing the seeds if fully developed. Heat the Oil and Butter together in a pan, add the Marrow and Onion and cook together, stirring, for about 4 to 5 minutes over a low heat. Add the Wine, season well and simmer, covered, for 5 to 6 minutes until the Marrow is just tender. Turn into a heated serving dish, squeeze a little Lemon juice over and sprinkle with chopped Parsley.
