Mincemeat Recipe

Mincemeat with Apples, Raisins, Sultanas, Currants, Mixed Peel, Suet, Lemons, Nutmeg, Strawberry Jam, Brandy.

INGREDIENTS

2 lb (900g) Cooking Apples
1 lb (450g) Raisins
1 lb (450g) Sultanas
1 lb (450g) Currants
12 oz (350g) Mixed Peel
1 lb (450g) Suet
1 lb (450g) Castor Sugar
Grated Rinds from 2 Lemons
Juice of 3 Lemons
1 Nutmeg, grated
12 oz (350g) Strawberry Jam (Optional)
Brandy or Whisky

METHOD

The above quantities make about 8 lbs (3.6kg) of mincemeat.

If a smaller quantity of mincemeat is required, use half or a quarter of the above ingredients. Jam can be left out if preferred, but it does give a nice flavour.

Wash the apples and core them. Put all the fruit, peel and suet through a mincing machine (or blend) - or chop together as finely as possible.

Stir in the sugar, grated lemon rind and the juice, the nutmeg and the jam if used. Sprinkle a few whole currants, and a little brandy or whisky. Mix thoroughly. Put into jars or pots and cover closely.
