Onion Sauce Recipe

Onion Sauce Recipe with Onions, Butter, Flour, Milk & Cream.

INGREDIENTS

3 medium sized Onions (sliced)
1 oz (25g) Butter
2 tablespoons Plain Flour
1/2 pint (300ml) Milk
Salt & Pepper
1 tablespoon Cream, or 1/2 oz (12g) Butter (optional)

METHOD

Slice the Onions and cook in boiling, salted water until tender. Drain thoroughly and sieve, or blend if you prefer a smooth sauce.

Melt the Butter, take off the heat and add the Flour. Tip on the scalded Milk (scalding the Milk will make it less likely to curdle) and when thoroughly blended, stir continually over a moderate heat until boiling. Simmer for 2 - 3 minutes, add the prepared Onions, adjust the seasoning and finish with a spoonful of cream or a knob of Butter.
