Parkin Recipe
Parkin Recipe with Flour, Butter, Brown Sugar, Treacle or Golden Syrup, Oatmeal, Baking Powder and Mixed Spice.
INGREDIENTS
7 oz (200g) Flour
3 oz (75g) Butter
2 oz (50g) Brown Sugar
2 tablespoons Treacle or Golden Syrup
4 oz (100g) Medium Oatmeal
1 tablespoon Baking Powder
1/2 teaspoon Mixed Spice
METHOD
Mix together the flour and oatmeal and rub in the butter. Add the sugar, baking powder and spice and mix well together. Add a tablespoon of boiling water to the treacle and mix this into the dry ingredients. Shape into balls the size of a large walnut, put them in a greased baking tin and press a blanched almond half or a piece of candied lemon peel on each.
Bake in a moderate oven for a quarter of an hour.
Enough for 4 people.
