Parkins Recipe
Parkins Recipe with Oatmeal, Flour, Butter, Sugar, Ginger, Cinnamon, Syrup and Almonds.
INGREDIENTS
4 oz (100g) Oatmeal
4 oz (100g) Flour
1 oz (25g) Butter
1 tablespoon Sugar
1 teaspoon Bicarbonate of Soda
1/2 teaspoon Ground Ginger
1/4 teaspoon Ground Cinnamon
4 oz (100g) Golden Syrup
A Few Blanched Almonds (Optional)
1/2 teaspoon Salt
METHOD
Mix together the flour, oatmeal, salt, sugar, soda and spices. Mix thoroughly. Melt the butter and stir it in. Add enough syrup to form a stiff paste. Put small pieces on a greased tray, flattening them out in biscuit shapes. Press a blanched almond on each and bake in a very moderate oven (160C, 325F, Mark 3) for 45 minutes to 1 hour.
