8 Hard Pears
1/2 bottle Red Wine
1 pint (550ml) Water
1 Cinnamon Stick

METHOD
Place the Red Wine, Water, Castor Sugar and Cinnamon Stick in a large saucepan and gently boil until it reduces down and becomes a syrup.
Peel the Pears, but leave the stalks attached. Place them upright in the syrup and cook until they become soft and have turned red.
When ready, remove the Pears to a deep serving dish and pour over all the syrup. Allow to cool and then place into the fridge to chill overnight. Remove the Cinnamon Stick before serving.
