Pineapple Chicken Recipe

Pineapple Chicken Recipe with Chicken, Butter, Pinapple Rings, Lemon, Soya Sauce, Walnuts, Sultanas & Rice.

INGREDIENTS

1 x 3 1/2 lb (1.5kg) Chicken
2 oz (50g) Plain Seasoned Flour
4 oz (100g) Melted Butter
1 x 8 oz (225g) Tin of Pinapple Rings
2 tablespoons Lemon Juice
2 tablespoons Soya Sauce
2 tablespoons Soft Brown Sugar
2 oz (50g) Walnuts, chopped
2 oz (50g) Sultanas
1 cup Fried Rice

METHOD

Joint the Chicken into four. Roll each piece in the seasoned Flour and fry in Butter until brown. Place in a casserole. Drain the Pineapple Rings and mix the juice with the Lemon Juice and Soya Sauce. Pour over the Chicken, adding just enough water so that the liquid covers the joints. Cook at 350F / 180C / mark 4 for 1 hour or until tender. Sprinkle the Brown Sugar liberally over the Pineapple Rings and brown them under the grill. Serve Chicken on a large oval dish, surrounded by the Pineapple Rings filled with the Walnuts, Sultanas and Rice. Serves 4.
