Pork Hotpot Recipe

Shortbread Pork Hotpot with Steak, Potatoes, Onion, Carrot, Turnip, Apple, Bacon and Herbs.

INGREDIENTS

8 oz (225g) Pork Steak
1 lb (450g) Potatoes
1 Onion
1 Small Carrot
1 Turnip
Sage
1 Onion
1 Cooking Apple
Small Rasher of Bacon
1 tablespoon Flour
Salt & Pepper

METHOD

Wash, peel and slice the vegetables. Peel and dice the apple. Mix a good seasoning of salt & pepper with the flour. Chop the bacon, cut the meat into small pieces, and dip each into the seasoned flour. Line a casserole with the vegetables, then add a few pieces of meat and chopped bacon, some cooking apple, and some sage, then more vegetables, meat, apple and sage. The top layer should be the potatoes peeled and sliced. Cover with cold water or stock, and bake in the oven (375F, Mark 4) until the vegetables are done.
