Pork with Prunes Recipe

Pork with Prunes with Pork Loin, Stoned Prunes, Ground Ginger and Pork Stock.

INGREDIENTS

3 lb (1.35kg) Loin of Pork
20 Stoned Prunes, rinsed & halved
Salt
White Pepper
Pinch of Ground Ginger
1 pint (600ml) Pork Stock

METHOD

Have the meat boned and prepared for rolling. Stuff it down the middle with the prunes side by side. Rub the meat well with the seasonings, roll it up and tie it. Brown it quickly all over in a frying pan. Transfer to a casserole, pour over the hot stock, put on the lid and simmer over a very low heat for about an hour and a half until tender. Serve with fried potato balls, apple sauce and more stewed prunes if you wish.
