Potato and Leek Soup Recipe
Potato and Leek Soup Recipe with Potatoes, Water, Leeks, Butter & Parsley.
INGREDIENTS
12 Medium Potatoes, peeled and quartered
4 pints (2 litres) Water
9 Medium Leeks
2 oz (50g) Butter
Salt & Pepper
Parsley
METHOD
Wash and chop the Leeks. Melt the Butter in a saucepan, add the Leeks and allow to cook gently for a minute or two. Add the Potatoes and the Water. Put on the lid and bring to the boil. Simmer for two hours. Serve sieved or whisked up with a fork. From a half to a pint of Milk can be added to the soup before serving. In that case use only 3 pints of Water. A cup of cream can be stirred in if a rich soup is wanted.
Enough for 6 people.
