Potato Soup Recipe
Potato Soup Recipe with Potatoes, Onion, Butter, Stock, Milk and Parsley.
INGREDIENTS
1 lb (450g) Potatoes
1 Large Onion
2 oz (50g) Butter
1 tablespoon Cornflour or Plain Flour
1 1/2 pints (900ml) Vegetable Stock
1/2 pint (300ml) Milk
Small teaspoon Chopped Parsley
Salt & Pepper
METHOD
Peel the potatoes and onion and cut them into small pieces. Put the stock or water into a saucepan, and when it boils, add the vegetables. Simmer until the onion and potato are quite soft, about twenty minutes. Take the pan off the stove and beat with a wooden spoon until the vegetables are smooth. Stir in the butter and season to taste. Mix the cornflour or plain flour with a little milk, add this and stir while it boils for 5 minutes. Pour in the milk. Make it hot, sprinkle in the parsley, and serve.
Enough for 4 people.
