Potatoes and Juniper Berries Recipe

Potato Sticks with Juniper Berries.

INGREDIENTS

1 lb (450g) Medium sized Waxy Potatoes
2 oz (50g) Butter
1 tbp Olive Oil
6 Juniper Berries (crushed or chopped)
Salt & Pepper

METHOD

Peel the Potatoes and slice into fine sticks with a sharp knife or with a Mandolin. Alternatively you could coarsely grate them with a grater.

Place into a colander and wash well under cold water to remove the starch. Shake and then pat them dry inside a clean tea towel.

Heat up the Butter and the teaspoon of Olive Oil in a large frying pan on a medium flame. Put the Potato sticks into the frying pan along with the Juniper Berries. Season well with Salt and Pepper. Stir and fold the ingredients together.

Let the Potatoes stew rather than fry for around 20 minutes. Occasionally turn over from time to time. Serve when the Potatoes have become tender, verging on falling apart.

Serve immediately.

Serves 4 as a side dish to a main dish of Meat.
