Prawn Cocktail Recipe

Prawn Cocktail Recipe with Prawns, Lettuce & Marie Rose Sauce.

INGREDIENTS

A handful of a crispsy Lettuce (Little Gem)

For the Marie Rose Sauce...
9 oz (250g) Small Cooked & Peeled Prawns*
4 fluid oz (100ml) Mayonnaise
4 fluid oz (100ml) Salad Cream
2 tbsp of Double Cream
1 tbsp Tomato Ketchup
1 tsp Lemon Juice
A dash of Tabasco sauce
A dash of Paprika

METHOD

Drain the Prawns as well as possible.

With a fork, mix to a smooth pink sauce the Mayonnaise, Salad Cream, Double Cream, Tomato Ketchup, Lemon Juice & Tabasco in a medium sized bowl. Add the drained Prawns to this bowl and mix well, coating them nicely with the sauce. Cover and chill the mixture in the Fridge until ready to use.

When ready to serve...

Finely Shred your Lettuce with a knife. Layer the bottom of 2 Glass Goblets or 2 Small Glass Bowls with said shred Lettuce and arrange upon top generous spoonfuls of the Prawn & Marie Rose Sauce. Dust with a sprinkle of Paprika powder. Serve immediately with smiles.

Serves 2 as a Starter.

NOTES

There are some recipes that use only Mayonnaise (usually older versions) and some that use only Salad Cream. I prefer a mixture of both, but the choice is up to you. For that authentic childhood vibe use Heinz Salad Cream, Mayonnaise & Tomato Ketchup alongside the often bullied and under-rated Iceberg Lettuce.

If you are feeling particularly adventurous and / or ironic it's an enjoyable experiment using posh ingredients - Rocket, Prawns in Shells, Homemade Mayonnaise & Salad Cream**, Tomato Puree, Free Range Lemons, Spanish Sweet Paprika rather than the usual.

* Fresh or Frozen Prawns? The kind of Ready to Eat Cooked & Peeled Prawns found in Supermarkets are apparently and merely just defrosted Frozen Prawns sold as fresh.
