Queen Pudding Recipe
Queen Pudding with Rice, Milk, Sugar, Butter, Egg, Lemon Rind and Castor Sugar.
INGREDIENTS
2 oz (50g) Rice
1 pint (600ml) Milk
1 oz (25g) Granulated Sugar
1 oz (25g) Butter
1 Egg
Grated Rind from 1/2 Lemon
2 oz (50g) Castor Sugar
METHOD
Wash the rice, put it in a saucepan with the butter and milk, add the granulated sugar and simmer until soft. Cool, then stir in the beaten yolk of the egg and the lemon rind. Turn the mixture into a pie dish. Whip the egg white, mix it with the lemon juice and castor sugar. Put this mixture on top of the rice and brown in a moderate oven (180C, 350F, Mark 4) for 45 minutes or until brown.
