Rabbit & Potato Pie Recipe
Rabbit & Potato Pie Recipe with Rabbit, Pork, Ham, Parsley, Stock or Water, Potato & Flour.
INGREDIENTS
1 Rabbit
8 oz (225g) Pickled Pork
4 oz (100g) Cooked Ham
1 teaspoon Chopped Parsley
Salt & Pepper to taste
1 pint (500ml) Stock or Water
Sliced Raw Potato
1 1/2 tablespoons Plain Flour
METHOD
Joint the Rabbit and soak in cold salted water for 1 1/2 hours. Use all the joints except the ribs. Wipe, dry and cut the Pork and Ham into small pieces. Season the Flour with the Salt & Pepper, and dip the Rabbit joints, Ham and Pork in the Flour. Arrange in a pie dish with a funnel in the centre. Sprinkle with Parsley, add sliced Raw Potato and Stock or Water. Cover with Potato Crust* and bake.
Enough for 4 people.
