Sausages in Beer Recipe
Sausages in Beer with Mashed Potato.
INGREDIENTS
1 lb (450g) Sausages
Salt
Bay Leaf
Peppercorns
3/4 pint (450ml) Good Quality English Beer or Ale
A Brown Roux
Mixed Spice
Mashed Potato
METHOD
Put the sausages into a bowl, pour boiling water over them and leave for a minute or so. Dry them and then brown them all over in a little oil which you have added a little salt, the peppercorns and the bay leaf. Add half a pint (330ml) of the beer, bring quickly to the boil and boil for a few minutes to reduce it a little. Now add some more beer, enough to replace what has boiled away and to cover the sausages. Let them simmer for a quarter of an hour. Meanwhile make the mashed potato.
When ready to serve, strain off and thicken the sauce with the roux, adding a pinch of mixed spice. Fill a serving dish with mash potato and place the sausages on top. Pour the sauce over the top and serve.
