Scotch Hot Pot Recipe

Scotch Hot Pot Recipe with Potatoes, Beef, Pork Sausages, Tomatoes, Apple, Onion, Flour & Stock.

INGREDIENTS

2 lb (900g) Peeled Potatoes
1 lb (450g) Shin of Beef
1/2 lb (225g) Pork Sausages
1/2 lb (225g) Peeled Tomatoes
1 Apple
1 Onion
1 tablespoon Plain Flour
Stock or Water
Salt & Pepper to taste

METHOD

Skin and cut each Sausage into 3. Cut the Meat into suitable pieces. Dip the Meat and Sausage into Flour seasoned with Salt & Pepper. Peel and slice the Apple and Onion and slice the Potatoes and Tomatoes. Arrange a layer of sliced Potatoes in the bottom of an earthenware casserole. Cover with Meat and Sausage, then with the mixed Vegetable and Apple. Repeat layers, finishing with Potato. Fill three quarters full with Stock or Water, or with gravy diluted with water. Cover closely. Bake in a moderate oven for 2 hours. Serve from casserole.
