Sole Otero Recipe

Sole Otero Recipe with Potatoes, Cooked Shrimps, Fillets of Sole, Butter, White Sauce and Parsley.

INGREDIENTS

4 Large Potatoes
8 oz (225g) Cooked Shrimps
4 Small Fillets of Sole
1 tablespoon Butter
1/4 pint White Sauce
Parsley
Salt & Pepper to taste

METHOD

Bake the Potatoes in their jackets. When soft cut a neat round in the top of each one. Scoop out most of the pulp of the Potato. Mix the Shrimps with the White Sauce and put a little into each Potato. Season and roll back each Fillet of Sole. Put 1 into each case. Put the Potatoes back into the oven until the Fish is cooked. Before serving, pour a little more hot Shrimp Sauce over each fillet and garnish with Parsley. Serve on a hot dish, on a doyley.

Enough for 4 people.
