Spiced Fruit Tart Recipe

Spiced Fruit Tart with Short Sweet Pastry, Dried Fruit, Almonds, Sugar, Mixed Spice, Cooking Apple and Milk.

INGREDIENTS

8 oz (225g) Short Sweet Pastry
2 oz (50g) Raisins
2 oz (50g) Currants
1 oz (25g) Peel
1 oz (25g) Ground Almonds
1 oz (25g) Sugar
Pinch of Mixed Spice
Pinch of Ground Cinnamon
Pinch of Ground Ginger
1 Large Cooking Apple, cored, peeled and chopped
A little Milk
Castor Sugar

METHOD

Make the pastry and roll it out in a large circle. Mix all the fruit with the spices, sugar and ground almonds. Spread this mixture on half the pastry. Fold over the other half, pinch the edges, prick, and bake for 25 minutes in a moderate oven (220C, 425F, Mark 7). When nearly done, brush over with milk, sprinkle on a little castor sugar and return to the oven for just a few minutes longer.

Serves 4 to 6 people.
