Stargazing Pasties Recipe with Potato Short-Crust Pastry, Potato Stuffing, Egg & Herrings.
INGREDIENTS
6 oz (175g) Potato Short-Crust Pastry
Potato Stuffing
1 Egg, beaten
3 Herrings, with head and tails left on
METHOD
Prepare the Pastry as for Cornish Pasties. Remove the backbone from the Herrings (be sure that your fishmonger does not remove the heads and tails) and stuff them with the Potato Stuffing. Cut 3 rounds about 6 inches across from the Pastry. Brush round the edge of each round with beaten Egg. Lay 2 Herring on each round and join the pastry over the back of the Herring, pressing the edges well together and finishing with a crimped edge, similar to a Cornish Pastie. The heads and tails of the Herrings should stick out of the Pastry case. Brush the Pasties with more beaten Egg. Cook in a hot oven (421F, 220C, Mark 7) on a greased backing sheet, for about 30 minutes.
Enough for 6 people.
