Stewed Tripe Recipe

Stewed Tripe Recipe with Tripe, Milk, Onion, Parsley, Nutmeg, Butter and Flour.

INGREDIENTS

1 lb (450g) Tripe
1/2 pint (300ml) Milk
A Little Water
1 Onion
A Sprig of Parsley
Pinch of Grated Nutmeg
1 oz (25g) Butter
1 teaspoon Plain Flour
Salt & Pepper

METHOD

Wash the tripe, dry it, and cut into small pieces. Put it into a large saucepan with the milk and add water until the tripe is well covered. Add the sliced onion and parsley and simmer for forty five minutes. Then knead the butter and flour together and stir them in. Season with salt & pepper and the nutmeg, if you like the flavour. Simmer for another hour and serve very hot.

Enough for 4 people.
