Stuffed Marrow Rings Recipe with Marrow, Cooked Meat, Onion, Breadcrumbs, Mustard, Dried Herbs and Gravy
INGREDIENTS
1 Marrow
Cooked Meat - any left over meat
Onion
Soft White Breadcrumbs
Mustard
Salt & Pepper
Mixed Dried Herbs
1 Beaten Egg
Gravy
METHOD
Peel the marrow and slice it into 1 1/2 inch (40mm) rings. Remove the seeds and place on a greased oven tray.
Put the meat through a mincer (or in a blender). For 1/2 lb (225g) meat add 1 grated onion, 2 oz (50g) breadcrumbs, 1 teaspoon of mustard, 1 teaspoon mixed dried herbs and 1 beaten egg. Season generously with salt & pepper. Mix everything together thoroughly.
Fill the marrow rings with the mixture and place in a moderately hot oven (190C, 375F, Mark 5) for 30 to 40 minutes until the rings are soft. Serve with a good thick gravy.
