Vegetable Soup (Quick) Recipe
Vegetable Soup (Quick) Recipe with Carrots, Turnips, Potatoes, Onions, Parsnips, Herbs, Milk and Butter.
INGREDIENTS
4 oz (100g) Carrots
4 oz (100g) Turnips
4 oz (100g) Potatoes
4 oz (100g) Onions
4 oz (100g) Parsnips
Small Bunch of Herbs
6 Peppercorns
1 teaspoon Salt
1 pint (600ml) Milk
1 pint (600ml) Water
1 oz (25g) Butter
1 large teaspoon Plain Flour
METHOD
Prepare the vegetables, then grate them. Put them into a large saucepan with the salt, the peppercorns and herbs tied in muslin, milk and water. Boil gently until the vegetables are quite soft - about 15 minutes. Blend the butter with the flour, add and stir while the soup simmers for 5 minutes longer. Serve very hot.
Enough for 4 people.
